Danae Tsekoura, Chef of raw foods – Owner of “TrooFood”

“Kale” comes into our country from the vegan collective “TrooFood Liberation” who served it to us in various versions of delicious chips, where sprouts dried after having bathed under a sauce with cashew nuts. The Chef of raw foods and simultaneously one of the “TrooFood”  owners, speaks exclusively to “Greecious” about Kale Chips.

-How did you decide to get involved with something so special, such as raw organic products?

“Troo Food” is a small family business manufacturing rough (raw), handmade, organic products, of high nutritional value, which is created by the need for true food supply to consumers. The first synthetic “troo” is a pun from the English word “true” which means true and Greek verb “troo” (eat). “True food” on the one hand and “eat food” on the other hand.

The mission of “Troo Food” is to inform as many people as it can on the importance of proper nutrition, the relationship we should have with our daily food, with people who supply us and ideally with the people producing it.

-When is a product considered as a biological high nutritional value one?

The nine codes of “Troo Food” have been certified as organic by the certification body for organic product “ΔΗΩ» (DIO) in February 2016. Sublime nutritional value means that the products of “Troo Food” are prepared by the method of slow dehydration for a long time (12-18 hours) in low temperature, less than 46 degrees Celsius, so that they maintain all the nutritional value of the raw materials.

-Do you also export abroad?

The above feature begins to appear in foreign markets, where we timidly make our appearance, exporting small quantities even in countries like Germany, England, Luxembourg and France. Specifically, in the summer of 2015 we were awarded at the food festival "Umami" organized by the magazine "Athinorama" with the “Innovation Award”.

-Why should someone choose “kale” chips;

Because they are tasty and healthy! Is there a better combination to choose for ones food, having been used to the junk snacks we have been eating the last decades?

-What are the kinds of flavors circulating?

Three cheezy flavors (written with “z” and not an “s” as it should be) just because it does not contain any sort of cheese or dairy product of course). The cheesy flavor comes from nutritional yeast. Spicy with smoked paprika and cayenne pepper. Mustard & Chia seeds with mustard seeds, cider vinegar horseradish and spinach.

-How difficult it is for a newcomer like you achieve success and even in times of crisis?

Success for us is the increase of people crowd carefully choosing their food and starting to realize more and more the importance of food for the body and spirit. Regarding the crisis, certainly things are not rosy and in any case easy. We believe that perseverance is the element that can prevent even a big economic crisis from becoming an obstacle to any goal.

“Kale” chips cheezy - kale crackers mustard & chia - almond crackers red pepper.
